(Serves 4)
Ingredients
-1 Egg plant (about 1 lb)
-2 Tomatoes (about 1 lb)
-1 Zucchini (small one about ¼ pound)
-1 Yellow Squash (small one about ¼ pound)
-2 tablespoons Olive Oil
-3 tablespoon Parmesan Cheese
-1 Garlic Clove (Sliced)
-1 tablespoon Dried Basil
1. Cut egg plant and tomatoes into round thin slices, 1/4 inch thick. Cut yellow squash and zucchini into small cubes.
2. In a large frying pan, heat olive oil and add sliced garlic clove. Place egg plant and tomato in turn.
3. Then place cut zucchini and yellow squash into a circle in the frying pan.
4. Sprinkle parmesan cheese, salt, pepper and basil over the dish. Cover and simmer for 10 minutes until vegetables soften.
