With a little extra effort, this twist on guacamole will wow your guests.
1 medium red onion, sliced into ½” thick slices
2 jalapeño peppers
6 tomatillos, husked and rinsed
2 tablespoons olive oil
4 large fresh Avocados
3 cloves minced garlic
1/2 cup minced fresh cilantro
Juice of 2 limes
1 teaspoon salt
½ teaspoon black pepper
Preheat grill or grill pan to medium high heat. Brush red onion slices, jalapeño peppers, and tomatillos with olive oil. Place on grill or grill pan approximately 2 minutes per side or until slightly charred.
Remove to cutting board. Dice onions, tomatillos, and jalapeños (remove seeds from jalapeno if desired for a milder version). Set aside and cool to room temperature.
Peel and seed Avocados. Place in a large zip-lock or similar plastic resealable storage bag. Add minced garlic, cilantro, lime juice, salt, pepper, and cooled vegetables. Using hands mash ingredients until well combined. Snip corner of the bag open with scissors and pipe guacamole into serving bowl.
