I live in John Lloyd Beach State Park right on the ocean. We have many friends that shrimp, and they are generous with their catch.
I have to come up with new ways to use these beautiful shrimp, as well as our abundance of tropical fruit.
12 large shrimp, cleaned and cooked
2 tablespoons fresh lime juice
12 thinly sliced prosciutto
3 fresh figs quartered, or thinly sliced honeydew melon
12 teaspoons honey nut cream cheese spread
1 cup Tropical Salsa (recipe follows)
Tropical Salsa:
If you can't find fresh, by all means use fruit in jars or cans.
1 mango, diced
3/4 cup red papaya, diced
3/4 cup pineapple tidbits
1/2 cup red onion, chopped
1/2 cup sweet red pepper, chopped
2 jalepenos, seeded or not depending on your heat tolerance
1 tablespoon fresh lime juice
2 tablespoons fresh cilantro, chopped
Mix salsa ingredients together. Cover and chill.
Cook shrimp, marinate in lime juice for 15 minutes.
Place one slice of prosciutto down, place one shrimp in the middle.
Top shrimp with 1 teaspoon cream cheese, and one piece of fig or melon.
Wrap prosciutto around shrimp.
Serve with Tropical Salsa.
