This recipe is great for baby showers or any game-time event!
1 pound(s) of lean ground beef
1/4 cup(s) of bread crumbs (seasoned or unseasoned)
3 tbsp. of chopped green onion
2 eggs, lightly beaten
1 tbsp. of ketchup
1 tbsp. of 2% milk
1/2 cup(s) of shredded parmesan cheese
1/4 cup(s) of olive oil
8 ounce(s) shredded mozerella cheese
2 packages puff pastry dough, cut into 2" squares
salt and pepper to taste
1. Preheat the oven to 375 degrees.
2. In a large bowl combine ground beef, bread crumbs, onions, eggs, ketchup, milk, and parmesan cheese. Season with salt and pepper and mix with your hands until all ingredients are combined. Roll or scoop the mixture into mini meatballs (about 3/4" to 1" in diameter - keep them small so you can wrap them completely in the dough).
3. Heat the olive oil in a large skillet on medium heat. Drop the meatballs in the skillet and cook evenly on all sides until the meatballs are browned and cooked through. Cook the meatballs in batches if necessary.
4. Build the diapers: Place a teaspoon of cheese in the center of each piece of puff pastry. Place the meatball on top of the cheese.
5. Wrap the edges of the dough over the meatball, covering it completely. Repeat with the other pieces of pastry.
6. Bake the rolls on a sprayed cookie sheet for 10-12 minutes in the oven at 375 degrees or until the rolls are golden brown.
