(Serves 4)
-2 Avocados
-1/2 cup White Beans
-1/2 cup Kidney Beans
-12 Black Olives
-2 tablespoon Crushed Almond
-2 tablespoon Crushed Cashew nuts
-2 tablespoon Crushed Walnuts
-2 tablespoon Olive Oil
-1 tablespoon Soy Sauce
-1 tablespoon White Wine Vinegar
-1/2 tablespoon Honey
-1 Grated Garlic Clove
-2 teaspoon Lemon Juice
1. Scoop avocado pulp and cut into small cubes. Keep the avocado shells.
2. Rinse both white and kidney beans, and drain.
3. In a bowl, combine olive oil, soy sauce, white wine vinegar, honey, grated garlic clove, crushed almond, crushed cashew nuts and crushed walnuts. Mix well.
4. In another bowl, combine avocado, white beans and kidney beans. Add lemon juice.
5. In each avocado shell, put avocado and beans mixture. Pour the nuts sauce over avocados.
6. Serve
