I like to make these around the holidays because they make for quick and easy entertaining, and they are such a perfect foil for my famous punch!
16 ounces pineapple cream cheese
4 tablespoons flaked sweetened coconut
1/4 cup mixed sweet red and bell pepper, minced
2 tablespoons onion, chopped
1 tablespoon seasoned salt
1 teaspoon rum extract
2 cups chopped macadamia nuts, chopped fine, and divided
Mix all together reserving 1 cup of nuts to roll ball in.
Roll in nuts.
Cover with plastic wrap and refridgerate until ready to serve.
I either serve this with fruit, pineapple spears, sliced pears and apples.
Or I serve it with sticks of pound cake, vanilla wafers and home made sugar cookies.
