Much more satisfying than Wings!
2 pounds chicken drumsticks (approximately 8 to 10)
3/4 cup honey
16-ounce jar hot salsa of choice
1/4 cup firmly packed light brown sugar
Juice and grated zest of 1 large lime
In bowl, combine honey, salsa, brown sugar, and lime juice and zest. Reserve 1/2 cup.
Arrange drumsticks in shallow dish and pour remainder of marinade over all, turning to coat evenly. Cover and refrigerate at least 1 hour.
Preheat oven to 350-degrees. Lightly coat baking sheet with cooking spray. Arrange marinated drumsticks on baking sheet and bake 30 minutes. Remove from oven and increase oven temperature to 425-degrees.
In small saucepan, bring reserved 1/2 cup marinade to a boil. Reduce heat and simmer 4 minutes, or until slightly thickened. Brush marinade evenly over drumsticks. Return to oven and bake 20 minutes more, or until crispy.
