Chicken and Balsamic Sweet Peppers Bruchettas: Submitted by: Zachary Mitchell | Date Added: 8 Oct 2010

Ingredients

2 Each Chicken Breasts
½ tsp. Salt
½ tsp. Black Pepper
½ tsp. Oregano, Dried
½ tsp. Garlic Powder
1 Tsp. Canola Oil

1 Tbsp. Olive Oil
¼ Each Red, Green, Orange and Yellow Bell
Peppers; Diced Small
2 Tbsp. Balsamic Vinegar
12 Slices Baguette, ¼ Slices

Cooking Instructions

1. Preheat the oven to 350F.

2. Toast baguette slices with olive oil in the oven on a sheet pan. Until Golden brown.

3. Place in a bowl, all of the ingredients for the chicken.

4. Toss all of the ingredients.

5. Place Chicken on a sheet pan and bake until internal temperature reaches 165f with a thermometer.

6. Meanwhile in a sauté pan add balsamic vinegar, bell peppers. Cook until soft.

7. Dice chicken into small pieces.

8. Place chicken on toasted baguette slices.

9. Top chicken with balsamic sweet peppers.

10. Enjoy!
