Ingredients:

6 large flour tortillas
non-stick cooking spray
8 oz. monterey jack cheese, shredded
4 oz. mozzarella cheese, shredded
packaged pepperoni slices
Marinara sauce (homemade or favorite bottled) about 1 Cup

Using a flat pan or griddle on your stove top, heat pan to medium.

Take one floured tortilla and give it a thin coating of non stick cooking spray on one side. Place the oiled side down on the hot pan. Spread 2 T. marinara sauce on one half of the tortilla, top with a small handful of jack cheese and a smaller bit of mozzarella cheese. top the cheese with 5-7 slices of pepperoni. Using a large spatula, flip the half of tortilla not covered with ingredients over the ingredients. Press lightly and cook until golden brown, flipping when needed, and hot and bubbly.

Using a pizza cutting wheel, cut into wedges and serve.
