Spicey Snackers: Submitted by: ravyn moore | Date Added: 14 Oct 2010
Listed in: Baked Appetizers
Ingredients

This is a recipe i came up with after tasting Sonics Jalpenio poppers. I fell in love with the snack and wanted to be able to make my own. This is the result. (You can buy egg roll skins in place of making the dough but it tastes better made from scratch.)

1 1/2 cups all-purpose flour (more to coat the counter top)
1 egg
1/2 cup water
1/2 a pack of saltine crackers crushed
1/4 cup cream cheese
1 jar of hot Jalapinos diced
2 cups shredded cheddar cheese
1 cup milk
oil for frying
Ranch dressing for dipping

Cooking Instructions

In a mixing bowl mix flour, water, and egg to form a soft dough. Add more flour if needed. Cut the dough into four wedges and roll it out on floured counter top. The dough must be rolled paper thin.

Cut dough into triangles; each wedge should make six triangles. In a second mixing bowl mix cream cheese, cheese, and jalpenios - put a tablespoon of the mixture into each triangle then fold the two bottom halves of the triangle in over the mixture and roll the dough so that the end of the triangle comes down like an envelope - its the same thing you do to roll an egg roll.

Dip into cold milk, roll in cracker crumbs and set aside, heat oil until small bubbles form then start frying the snackers 2 minutes on each side less as the oil heats for crunchier snackers fry longer, drain on napkins serve hot with ranch dressing.

How much jalapeno are you using? Seems like you would not want to add more than about a 1/4 of a cup. Also, have you tried this with the Pillsbury continuous sheet appetizer pastry in the tube? It's kind of like crescent roll dough, so you could easily roll it out thin, then bake these in the oven instead of frying them. This would save time and they would not be as greasy. I'm not really into spicy foods so if I try this I may substitute bacon for the jalapeno's. Left by: Laura (30 Oct 2010)
