(Serves 4)
-1 Potato (1lb)
-1/2 cup Milk
-1oz Butter
-3 oz Bacon
-1 cup Shredded Italian Cheese
-1 tablespoon Dried Parsley
-4 English Muffins
1. Make mashed potato. Peal potato and wrap with plastic wrap and heat in a microwave for 5-6 minutes or until soften. Mash, add milk and butter. Mix well.
2. Chop bacon and sauté in a frying pan for a couple of minutes. Then add to the mashed potato.
3. Place ¼ cup of shredded Italian Cheese on each English muffin. Then put 1/8 of mashed potato and sprinkle parsley on top.
4. Bake at 350 degrees F for 5-6 minutes.
