(Serves 2)
Ingredients
-1 can of Cream Style Corn
-1/2 Onion
-2 tablespoon Butter
-4 tablespoon Flour
-1/2 cup Milk
-Salt
-Pepper
-1 Egg
-4-5 tablespoon Flour
-1 cup Panko or Bread Crumbs
-2 tablespoon Olive Oil
1. Preheat the oven to 450 degrees F.
2. Chop Onion. Heat butter in a sauce pan and sauté onion for a couple of minutes. Add flour and milk gradually. Then add cream style corn. Cook over low heat until thickens.
3. Chill in the refrigerator for about 1 hour.
4. Take about golf ball size of mixture and shape it into flat balls. Coat those in flour, dip in beaten egg and coat with panko or bread crumbs.
5. Place cream corn croquetts on the baking dish, pour the olive oil and bake for about 10-12 minutes.
